Upside-down Apple Tart

Something of a hybrid between Tarte Tatin and Tarte aux Pommes.

I use a 10-in (3.5qt / 3.3l) oven-proof skillet.

Pastry
1st 4oz 113g Butter
¼t Salt, if butter is unsalted
¼c 2oz 50g Sugar
1 Egg yolk or whole egg
1T Heavy cream, if using yolk
1½c 7¼oz 210g Flour
Filling
6 (approx) 2½lb 1130g Granny smith apples
5oz Sugar
1/3c or 5½T 3oz 80g Butter
1T Cinnamon
1T Mixed spice
2T Lemon juice (cheap OK)
